Meatball or Beanball?
I know that some folks would say that it is wrong to call a meatball a meatball if there is no meat in it, so let’s call them beanballs! In the meatless meatball’s defense, I brought them to a party for the “big game” that happens every February and no one could tell the difference! In fact, I told everyone they were meatless meatballs and they thought they tasted amazing and couldn’t believe their taste buds!
Whole Food, Plant-Based Recipe
With a no-sugar-added, no-oil, organic marinara sauce from Engine 2, and the E2 burger patties making up the base of this recipe, these little guys are great in the crock pot or prepared quickly in the skillet like we do for this recipe! - 1 or 2 packages of Engine 2 Plant-Strong Plant Burgers. We use the White Bean and Kale patty. Each <g class=”gr_ gr_92 gr-alert gr_spell gr_inline_cards gr_run_anim ContextualSpelling” id=”92″ data-gr-id=”92″>patty</g> makes approximately three meatballs, so each package will yield around nine meatballs, which will feed two or three people.
- 1 jar of no-sugar-added, no oil, marinara sauce (we use the Engine 2 Marinara for this one)
- 1 tablespoon of ground flaxseed
- 2.5 tablespoons of water
- Whole Wheat Hot Dog Buns of choice (we used Rudi’s Vegan Whole Wheat Buns)
- Place your frozen Engine 2 patties on a microwave safe plate and microwave per the directions on the box (45 seconds each side).
- While your patties are getting warm, make a quick flax egg. To do this, place 1 tablespoon of ground, organic flax seed into <g class=”gr_ gr_100 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar only-ins doubleReplace replaceWithoutSep” id=”100″ data-gr-id=”100″>blender</g> or cup-sized smoothie cup and grind it down to a powder. Dump the powder into a small bowl and add your 2.5 tablespoons of water. Wait five minutes.
- Time to get your buns ready! Place your hotdog buns in the toaster oven for a light toast to get them ready. One or two minutes should be fine…just enough to warm them.
- Once your patties are done, mix them together in a mixing bowl and add the flax egg. Roll the crumbles into beanballs and place them in your skillet to cook in the marinara sauce for 3-5 minutes and you are ready to serve your subs!
- Place your beanballs into the bun and devour!
- If you like a bit of melted goodness, you can add some plant-based cheese (as pictured above), but that is only an option. If you want to stay 100% whole food, plant-based, you can eat them as the recipe says. : )
